Mexican Flan

3 eggs
1 can evaporated milk
1 can condensed milk
8 oz. cream cheese
1 tsp. vanilla

Blend in blender 30 seconds

Melt 1 cup sugar in skillet until liquid.

Put melted sugar in round (straight sided) ovenproof dish. A cake pan works nicely. Pour the blender mixture on top. Place the pan into another pan with 2 cups of water. Bake at 400° for 1 hour 20 minutes. Done when knife comes out clean. Let cool on a rack for 2 hours. Turn upside down on a plate and refrigerate 2 hours. Decorate with cherries and/or powdered sugar.

I got this recipe from Soraya Brown. A gal from Mexico who attended our church. She made them for us at Christmas time.
