CINDY'S SEAFOOD PASTA SALAD

1 package crab meat, flaked or chopped
1/4-1/2 c miracle whip
7 oz elbow (or other) macaroni, cooked and chilled
2 TBLS lemon jioce
1/2 onion, chopped fine
1 stalk celery, diced
2 hard boiled eggs, chopped
1 TBLS paprika
salt and pepper to taste

Mix together all ingredients and chill, covered.  Serve over lettuce with tomato and extra hard boiled egg wedges.  Sprinkle with extra paprika.

Feel free to indulge in real crab meat, but you can also substitute a small can of tuna or imitation crabmeat.  Also, I kinda don't exactly measure every ingredient listed here, so you may want to experiment with the amounts to your taste.

Spaghetti Soup

1 lb. Ground beef and/or Italian sausage
4 cups water
4 cups tomato juice
1 tsp. salt
½ tsp. garlic powder
½ tsp. pepper
2 tab. Beef bullion
1 green pepper, minced
1 small onion, minced
1 - 14 oz can stewed tomatoes
1 small can tomato paste
2 cups cabbage, shredded
½ lb. uncooked spaghetti (in 3rds)
1 - 16 oz pkg. frozen vegetables

Brown beef and drain. Stir in water, juice, seasonings, bullion, pepper, onion, tomatoes, paste, cabbage and frozen vegetables; bring to a boil. Reduce heat and simmer 30 minutes or until vegetables are tender. Prepare spaghetti according to package directions and drain. Add cooked spaghetti into soup mixture; heat thoroughly.
Makes about 2 ½ to 3 quarts.

A little Tabasco is good. In a double batch beef and sausage is nice.

If you leave the spaghetti out it freezes nicely.
Just add the spaghetti after it’s thawed and heated. Otherwise it becomes mushy.

Skillet Mac 'n' Cheese

Cook 8oz elbow macaroni (2 cups dry)
Meanwhile, in blender mix:
1 1/2 cups whole milk
1 1/2 cups (6oz) sharp cheddar cheese
2 TBLS flour
1/2 tsp salt
1 TBLS oil

In large 10-12 inch skillet (I use iron), blend cooked pasta and cheese sauce.  Cook on med-low, stirring constantly to thicken and melt cheese...5-10 minutes.

Can serve as is, stick under the broiler for a few minutes, or throw in an 8x8 greased baking dish and bake and 350* for 30 minutes. (I top with buttered cubed bread or bread crumbs spritzed with Pam when I bake it.)

Unbelievable easy and super yummy!
