4 C sliced zucchini or yellow summer squash (as in the pic above)
2 eggs beaten well
1 C mayo
1 chopped onion
¼ C green pepper
1 C grated Parmesan
1 T butter
1 C crushed potato chips
salt and pepper

1. Cook zucchini in 2 C boiling water until tender, drain.

2. Mix eggs, mayo, onion, green pepper, cheese and butter, then add zucchini.

3. Pour into a greased baking dish and dab with butter, sprinkle crushed chips over top.

4. Bake at 350 for 30 minutes.
