No-Bake Chocolate Oatmeal Cookies

2 c. sugar
1/2 c. cocoa (Hershey’s “Special Dark” Cocoa Powder is the best!!)
1/2 c. milk
1/2 c. butter or margarine
1 t. vanilla
3 c. oatmeal
1/2 c. pecans (optional)

Mix and bring to boil sugar, cocoa, and milk; boil one minute. (Be sure to boil for a full minute or cookies will not get firm. Do not over boil either.) Add margarine, stir till until completely melted. Take off heat and add vanilla, oatmeal, & pecans, if desired. Drop on wax paper-covered cookie sheets by teaspoonful. Chill in refrigerator until firm (or outside in the freezing winter weather). Once firm, transfer to covered bowl and store in refrigerator.

These are my all-time favorite!
