Peaches and Cream Dessert

CRUST
2 c. flour
1 t. salt
1 egg
3 T. cold water
Cut shortening into flour & salt till resembles fine crumbs. Beat egg & water slightly, stir into flour mix. Toss till moistened. Gather into ball. Roll into rectangle: 14x10”. Fold into halves; place in 13x9 dish. Unfold pastry, press against sides of pan.

FILLING
1 c. sugar
5 med. peaches, peeled & sliced (5 cups)
1/3 c. flour
1 c. whipping cream
½ t. cinnamon

Mix sugar & flour; toss with peaches; spread over pastry. Pour cream over peaches, sprinkle with cinnamon. Bake 20 min @ 425º. Reduce oven to 350º. Bake 25-30 min. till crust is golden brown & cream partially set.
Let stand 30 min. before serving. Refrigerate remaining.
