POTATO POPPERS

1/2 onion, diced
1 celery stalk, diced
1/2 TBLS oil
1 1/4 cup mashed potatoes
1 cup brown rice, cooked
1/4 cup tomato paste
1/2 tsp salt
1/2 cup bread crumbs
1/4 cup parmesian, grated

Saute onion and celery in oil.
Combine all ingredients and form into 1 1/2 in balls.  Place on greased cookie sheet.
Bake on top oven rack for about 20 minutes at 350*, til delicately browned.

Great appetizer.  Great snack.  I cook potatoes and rice earlier in the day and refrigerate.
