4 cups raisin bran or bran cereal
1 cup corn oil
2 cups white sugar
1 cup brown sugar
4 eggs beaten
1 quart butter milk
3 cups whole wheat flour
5 teaspoons baking soda
2 teaspoons salt
1/3 cup wheat germ
Mix dry and wet ingredients separately. Then blend the two together in a large bowl, careful
not to over stir. Bake or store in a covered container in the fridge.
Bake 350 for 20-25 minutes.
6 weeks muffins because you can store this batter in the fridge for up to 6 weeks. You can
have fresh muffins daily without a whole lot of fuss. Add fresh fruit before baking to change
it up. My favorite is banana. This is my mom’s recipe.

Oat Pancakes
1 cup quick cooking oats
1 cup all-purpose flour
2tbls. baking powder
1 teaspoon salt
2 eggs, slightly beaten
1 ½ cups milk
¼ cup veg. oil
1 teaspoon lemon juice
Combine oats, flour, sugar, baking powder and salt in a mixing bowl. Make a well in the
center. Combine eggs, milk, oil, and lemon juice; pour into well and stir until moisten.
Add fruits or other staples such as raisins or chocolate chips into the batter then fry as
normal pancakes.
A restaurant in Bloomington made these delicious pancakes for Jon and I when we were at
IU.

1 teaspoon garlic powder

3 cans (12oz each) refrigerated biscuits
In small bowl combine oil, cheese and spices and set aside. Cut each biscuit in half, roll
each portion into a 6-in rope, and tie in a loose knot. Place on a greased baking sheets.
Bake at 450 for 6-8 minutes or until golden brown. Immediately brush with parmesan
mixture. (Yield 5 dozen)
Note: Makes a lot so, freeze some (good up to 2 months) and reheat in time for dinner at
350 for 6-8 minutes!

SIMPLE CINNAMON ROLLS
2 1/4 c baking mix (ie: Bisquick or Jiffy)

6 TBLS melted butter
Beat baking mix and milk with a fork until stiff. Knead in bowl til smooth. Roll out to large rectangle and spread half of the butter over, then sprinkle with cinnamon and sugar. Roll up tightly.
Cut into 1/2 inch slices and place on greased cookie sheet. Brush on remaining butter and sprinkle extra cin/sugar on top. Bake 10 min. or til golden at 450*.
Glaze while warm if desired:
1/2 c boiling water mixed with 1 c sifted powdered sugar.
I make these every Christmas morning. I double the batch, making 6 large rolls and 12 small rolls, baking them in large and regular muffin tins.

The Mill Shortcake
4 vaniilla almond scones
1 stick of butter
2 containers of strawberries
1 pt. whipped cream
Microwave the scones until warm, then slice each in half.
Butter each half with 1 Tbsp of butter.
Put bottom half of scone on plate, cover with 1 c. sliced strawberries, add a dollop of whip cream, then top with scone top.
Put about 1/2 c. strawberries on top of the top scone, finish with a large collop of whipped cream.
Repat for each scone

Oatmeal Bread
Oven 350ยบ
1 c. quick-cooking oatmeal 1 c. sugar

1/2 c. butter or margarine 1 1/2 flour
2 eggs 1 t. baking soda
1 t. vanilla 1/2 t. salt
1 t. cinnamon
Mix oatmeal, water, and butter. Cool.
Add remaining ingredients.
Place in greased loaf pan and bake 40-50 min.
or until toothpick comes out clean.

• 1 ½ c. self rising flour
• 1 tsp. Baking powder
• 6 TBLS butter
• 1/3 c. sugar
• ¼ c. milk, plus a little extra
1. Preheat oven to *400 and grease a cookie sheet
2. Peel, core and chop the apple
3. Sift flour and baking powder into a bowl. Cut in butter
4. Add apple peices. Stir in ¼ c. milk. Dough should be soft, not sticky
5. Roll out ball until it is round and about 1 inch thick
6. Cut into eight triangles, place on sheet and brush with extra milk
7. Bake for 20-25 minutes till golden
Maddie and I make this together. Everyone loves them, so we never have leftovers.

1 t ground cloves
1 t cinnamon
1 t nutmeg
1 t salt
½ t double acting baking powder
16 oz can (2 C) pumpkin
2/3 C salad oil
3 eggs, slightly beaten
1. Preheat oven to 350. Grease 2 standard loaf pans.
2. Mix flour, sugar, baking soda, cloves, cinnamon, nutmeg, salt, and baking powder in a large bowl, using a fork to mix.
3. Add remaining ingredients and mix until well blended and pour into pans
4. Bake about 1 hour or until toothpick comes out clean. Cool on wire racks 10 minutes, then remove from pans to cool completely.

Mix ½ c sugar and 1 tsp cinnamon in one gallon size ziplock baggie
Mix the 1 cup powdered sugar in another.
Drop doughnuts in and shake. SUPER YUM!

1/2 sup apple sauce
1 egg
1/2 cup chopped pecans (optional)
1 3/4 cups all-purpose flour
1 Tab baking power
2 ripe bananas, masked (1 cup)
1/4 cup skim milk
1 teas vanilla
Preheat oven to 400 F. Line 16 (2 1/2 inch) muffin cups with paper liners or spray with nonstick cooking spray.
In large bowl, combine graham cracker crumbs, flour, brown sugar, baking power and salt. In medium bowl, whisk together bananas, apple sauce, milk, egg and vanilla.
Stir apple sauce mixture into flour mixture just until moistened. Fold in pecans, if desired. Spoon evenly into prepared muffin cups. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan; cool on wore rack 10 min. Serve warm or cool completely.

Have all ingredients at about 70
Preheat oven to 350
Sift together:

2 ¼ t baking powder
½ t salt
Blend until creamy:
1/3 cup shortening
2/3 cup sugar
¾ t grated lemon rind
Beat in:
1 to 2 beaten eggs
1 to 1 ¼ cup ripe banana pulp
Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth.
Fold in: ½ cup broken nutmeats – optional
Place the batter in a greased bread pan. Bake the bread about 1 hour or until done. Cool before slicing.

3 cups flour
2 ¼ white
¼ rye
½ whole wheat
4 teas sugar
4 teas yeast
1 teas salt
1 ½ tab butter
1/3 cup sunflower seeds
Mix, add water
1 ¼ cup hot, hot tap water
Mix until all flour is gone
Add chopped seeds/nuts
Chop/ 1 cup total
¼ cup sunflower seeds
½ cup granola
¼ cup pumpkin seeds
1/8 cup sesame seeds
(or any combination)
Micro (1000 power)
Round dish w/water glass
3 min power 1, 3 min rest
3 min power 1, 6 min rest
Loaf pan w/ water glass

I had to put Mom’s favorite bread recipe in this year.
She liked me to make it for her and loved to eat it.
She passed away in the Fall of this year. I’ll miss her.

(yellow will work)
1 sm. package instant vanilla pudding
1/2 c. oil
4 eggs
1 cup boiling water
1/4 cup poppy seeds

Mix all ingredients together.
Pour into greased and floured bunt pan.
Bake at 350 degrees for 40 minutes.

Spread over batter
Bake 45 minutes at 350 degrees.
