Hash Brown Casserole

6 large eggs, well beaten
1 12 oz can evaporated milk
1 t. salt
1/2 t. black pepper
1 30-32 oz pkg frozen shredded hash browns
2 c shredded cheddar cheese
1 medium onion, chopped
1 small green pepper, chopped
1 cup diced ham (optional)

Combine eggs, evaporated milk, salt and black pepper in large bowl.  Add potatoes, cheese, onion, bell pepper and ham; mix well.  Pour mixture into greased 13x9 baking dish.
Bake at 350 degrees for 60-65 minutes or until set.

Yield: 12 servings
