Gramma McCracken’s Veggie Soup

(Gramma Jessie McCracken is my mother’s mom)

1 arm roast or bone-in chuck roast
Cook well covered with water. Simmer 1 ½ -2 hours. Put in fridge and skim fat off broth next morning. Lift meat out and shred with fork. Add back to broth.

Add to the pot:
2 cups diced carrots
2 cups diced cabbage (or little less)
3-4 med onions
1 qt. Tomatoes and juice (chop up)
2 cups diced celery
2 TBLS salt
½ tsp pepper

Add enough water to cover all and simmer 1-1 ½ hours

Then add:
1 lb bag frozen lima beans
1 lb bag frozen corn
1 lb bag frozen peas

Simmer another hour or so.

This is great! Freezes well in meal size portions. This recipe should never die!!!
