Susie’s Pickled Beets and Eggs

(This is my mom’s specialty!)

6 hard boiled eggs
1 can small whole beets

Let eggs cool. Drain beets halfway. Put in serving bowl.
Mix on stovetop to boiling, stirring constantly:
1 cup vinegar
1 cup water
2 TBLS brown sugar
¼ tsp. Cinnamon
½ tsp. Salt
2 whole cloves

Pour over eggs and let stand 6 hours at room temp, stirring every hour.
Serve or refridgerate.
