Zucchini Bread

Bunny Harvey cookbook (Karen’s mother in law)

3 eggs (beaten)
2 ½ cups sugar
1 cup oil
2 cup grated zucchini
2 t vanilla


1 t baking soda
¼ t baking powder
3 cups flour
1 t salt
2 t cinnamon

Mix together eggs, sugar, oil, zucchini and vanilla.
In a separate bowl mix together dry ingredients.
Stir the dry ingredients into the other mixture.

Bake in 2 greased loaf pans at 350 for 50 minutes. Let cool for 10 minutes.
