Dutch Apple Pie

1 Graham cracker crust
1 lg. egg yolk, slightly beaten
Brush bottom and sides of crust with egg. Bake on baking sheet at 375° for approx. 5 minutes.

OR use regular unbaked crust.

5 1/2 c. fresh, sliced, cored, peeled, tart cooking apples (NorthernSpies are best!)
1 T lemon juice
1/2 c. sugar
1/2 c. brown sugar
3 T flour
1/2 t. cinnamon
1/2 t. nutmeg
1/4 t. salt
Combine ingredients and pour into prepared crust

3/4 c. flour
1/4 c. sugar
1/4 c. brown sugar, packed
1/3 c. butter/margarine
Mix with fork or pastry blender until crumbly. Sprinkle topping mixture evenly over apples.

Bake pie on baking sheet until topping is golden and filling is bubbling about 50 minutes. Cool on wire rack.
