Potato Pockets on the Grill

4 potatoes julienned with skins on
3 carrots julienned
1/3 cup chopped onion (red or yellow)
2 tbls. Butter
½ cup shredded cheddar cheese
Salt and pepper to taste
Divide veggies equally between 4 pieces of aluminum foil squares sprayed with cooking
spray. Top with butter, salt and pepper. Pull ends of foil together and crimp tightly covering
veggies. Grill over med. Coils for 20-30 minutes or until tender. Open foil, sprinkle with
cheese, reseal for 5 minutes or until cheese is melted.
Great side kick with your grilled meat of choice!
