POTATO SOUP DELUXE

for those cool fall days……
4 T butter
1 onion chopped
1 stalk celery chopped
8 med. Potatoes, peeled and chopped
3 cups veg. or chicken stalk
Place butter, onion, and celery in a pot.
Sauté, stirring frequently until veggies are
tender.
Add potatoes and stir to coat with butter.
Add stock. Salt and pepper to taste.
Cover and heat until boiling. Reduce
heat to simmer, cook for 1 hour.
3 T. Flour
¼ cup cold water
2 cups milk
2 cups shredded cheddar cheese
½ cup sour cream
Blend milk and flour, add to soup. Add
milk, sour cream, and cheese. Simmer 15
minutes.
Ladle into bowls.
Top with:
Green onion, sliced
Bacon, cooked crisp and crumpled
