SAUSAGE-BEAN STEW

4 cups chicken broth
3 16oz cans beans (pinto, kidney, and butter), drained and rinsed
3 med. carrots, diced
3 stalks celery, diced
1 lb smoked sausage, cut to 1 in pieces
1 lg onion, chopped
1/2 cup pearl barley or brown rice
1 tsp tobasco
1/2 cup lentils
1 cup fresh spinich, chopped

In dutch over, place all ingredients except spinich. Cook and cover over med. heat 45-60 min.  Stir in spinich and heat thru.

Delicious!  A meal in itself with crusty bread.  Of course, Chris likes an extra dash of tobasco---or two...or three....!
