Karen's Turkey Soup

4 to 6 cups of left over turkey cut in 1” cubes
(boil carcass and bones for more turkey pieces
and broth)
2 - 3 quarts of liquid (water and turkey broth)
1 or 2 onions
3 or 4 stalks of celery
Chicken base ( 1 Tab. for every cup of water) (Gordon’s foods)
2 Tab. of beef base (optional) (Gordon’s)
1 or 2 cups rice and/or barley (no pasta, it gets mushy)
Parsley
Mrs. dash or season salt
Basil
Garlic
Cayenne pepper or hot pepper flakes (just a little zip)
Any seasoning you particularly like

I put all this in a large pot and let it simmer for hours. Toward dinner time I thicken it a little with cornstarch (about 1/3 cup) and water (2/3 cup). Cook another 1/2 hour.

Add frozen peas, carrots or any frozen veg. combo

Serve with rolls or just bread. Great on those cold winter nights.
