Lemon Meltaways

Cookies Fern Utz
1 1/4 cups flour
1/2 cup cornstarch
1/3 cup powdered sugar
1 tsp. grated lemon peel
1 Tbls. lemon juice
3/4 cup butter, softened

1/4 cup butter, softened
1 tsp grated lemon peel
1 tsp. lemon juice

In large mixer bowl combine all cookie ingredients. Beat at low speed, scraping bowl often, until well mixed (2-3 minutes).

Divide dough in half. Shape each half into 8x1 inch roll. Wrap in plastic food wrap. Refrigerate until firm (1 -2 hours).

Heat oven to 350F. With sharp knife, cut each half into 1/4 inch slices. Place 2” apart on cookie sheets. Bake for 8-12 minutes or until set. (Cookies will not brown.) Cool completely.

In small mixer bowl combine all frosting ingredients. Beat at medium speed, scraping bowl often, until fluffy (1-2 minutes). Frost cooled cookies.
Makes 4 dozen cookies

*We had these on a retreat and they were great.
